One bite of my Norwegian mother in-laws homemade sweet and spicy pickled courgettes and I was hooked, I ended up not only taking home the rest of the jar but the recipe too. I have been making these delicious pickles ever since. I have used the same recipe to make pickled radishes as well.
Pickled radishes and courgettes are a great compliment to summer salads and sandwiches. They add an extra tangy crunch with a slight kick. The pickled radishes are great for enhancing Asian style salads and wraps.
HOMEMADE PICKLED COURGETTES AND RADISH RECIPE
METHOD
1. Cut the courgettes, radishes and onions into slices approximately 5mm thick. Sprinkle liberally with the sea salt cover with ice and leave to drain for approximately an hour. This insures that the vegetable remain crisp and crunchy after pickling.
2. Whilst the vegetables are draining, place the cider vinegar sugar and spices into a saucepan. Bring to the boil, simmer for 5 minutes and then cool.
3. Sterilize your pickling jars. I wash mine in the dishwasher on the hottest setting, then I place them into a pan of boiling water for a few minutes, or 15 minutes in a hot oven.
4. Drain the vegetables, layer them into your jars. I like to keep my courgettes and radishes separate, but there is no reason not to mix them if that’s what you prefer. When the jars are full, pour the cooled pickle juice into them until the vegetables are covered. Seal the jars tight and leave to cool. The pickles should keep for couple of weeks in the fridge, if they last that long without being eaten first.
This recipe should provide enough for 2 large jars of pickled courgettes and 2 medium jars of pickled radish. That’s one each for me, and one each for my pickle mad friend Wendy. The sweet and spicy pickled courgettes taste delicious with, cheese, cold meets, salads and fish. Whereas the pickled radishes are great a complement to Asian style wraps and salads. The pink colour of pickled radishes also make salads look really appetising . Or you could just eat eat your pickles straight from the jar like Wendy.
